- 1/4 cup, plus 2 tablespoons extra-virgin olive oil
- 1 teaspoon dried oregano
- 3 tablespoons pepperoncini pickling liquid
- 1 large garlic clove, grated
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Red pepper flakes, to taste
- For the Salad:
- 2 large heads romaine lettuce, washed and finely chopped
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, quartered
- 1/2 cup black kalamata olives, pitted and chopped
- 1/2 cup Castevetrano olives, pitted and chopped
- 1/2 cup pepperoncini peppers, drained
- 1 (7-ounce) jar marinated and quartered artichoke hearts, drained
- 1 (4-ounce) jar roasted red pepper strips, drained
- 1/2 English cucumber, chopped
- 1/4 medium red onion, thinly sliced
- Freshly grated Parmesan, for serving
Instructions
- Make the Dressing: In a tight-sealing, medium jar, add all dressing ingredients and shake until creamy. Season to taste with salt, black pepper, and red pepper flakes.
- Make the Salad: In a large bowl, add all salad ingredients and toss to combine with dressing. Season to taste with salt and black pepper. Serve in a large bowl or on a deep platter with freshly grated Parmesan on top.
