Description

Entomatadas are a delightful Mexican dish featuring corn tortillas enveloped in a rich tomato sauce, delivering a vibrant and comforting meal that everyone will love.

Ingredients

Scale

Tomato Sauce

  • Fresh Tomatoes: 6 ripe tomatoes
  • Onion: 1 medium onion
  • Garlic: 2 cloves of garlic

Tortillas

  • Corn Tortillas: 10-12 tortillas

Topping

  • cheese: 1 cup shredded cheese (e.g., queso fresco or Monterey Jack)

Instructions

  1. Prepare the Tomato Sauce: Start by blending fresh tomatoes, onion, and garlic until smooth. Cook this mixture in a saucepan over medium heat until it thickens slightly, stirring occasionally to prevent sticking.
  2. Warm the Tortillas: Heat a skillet over medium heat and warm the corn tortillas one at a time for about 30 seconds on each side until they are pliable but not crispy.
  3. Assemble the Entomatadas: Dip each warm tortilla into the tomato sauce, fill it with your choice of filling, and roll it up. Place the rolled tortillas seam-side down in a baking dish.
  4. Top with Sauce and Cheese: Pour additional tomato sauce over the assembled entomatadas and sprinkle with cheese. Make sure to cover them evenly for a perfect melt.
  5. Bake: Preheat your oven to 375ยฐF (190ยฐC) and bake the entomatadas for about 15-20 minutes, or until the cheese is bubbly and golden.

Notes

  • Always use the freshest ingredients you can find for the best flavor.
  • Be mindful of the filling; overstuffing can make them difficult to roll and eat.
  • If your sauce is too thick, add a bit of water or broth to achieve your desired consistency.
  • Allow the entomatadas to rest for a few minutes after baking for easier serving.
  • Try different garnishes like fresh cilantro, sour cream, or avocados for added flavor.
