Elote Dogs are a fun and flavorful twist on traditional hot dogs, topped with a savory mix of grilled corn, cilantro, onion, chili powder, crumbled cheese, and chipotle aioli. A perfect fusion of classic comfort food and Mexican street food!

- Jumbo hot dogs
- Hot dog buns
- 4 ears of corn
- 1/2 cup white onion, finely chopped
- 1/2 cup fresh cilantro, finely chopped
- 1 tablespoon ground chili powder
- Salt and pepper, to taste
- Crumbled cotija cheese or feta cheese
- Chipotle aioli
- Limes
Instructions
- Grill the hot dogs on medium heat until cooked through, about 5-7 minutes.
- While the hot dogs are cooking, grill the corn until slightly charred. Once done, cut the kernels off the cob into a bowl.
- In a separate bowl, mix the chopped onion, cilantro, ground chili powder, and season with salt and pepper.
- Assemble the Elote Dogs by placing each grilled hot dog in a bun. Top with the grilled corn mixture, crumbled cotija cheese (or feta), and a drizzle of chipotle aioli.
- Finish with a squeeze of fresh lime juice and serve immediately. Enjoy!
Notes
- For extra spice, feel free to add more chipotle aioli or sprinkle extra chili powder on top.
- If you prefer a milder flavor, you can omit the chili powder or use paprika instead.
