Description

Enjoy a low-carb, cheesy, and satisfying alternative to traditional pizza with this Eggplant Pizza! Made with roasted eggplant slices, topped with savory marinara, melty mozzarella, and fresh veggies, itโ€™s a quick and healthy meal perfect for busy nights.


Ingredients

  • 1 large eggplant

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup pizza sauce

  • 1 cup mozzarella cheese, divided

  • 1/2 cup provolone cheese, divided

  • 1/4 cup mushrooms, chopped

  • 1/4 cup onions, chopped

  • 1/2 cup bell peppers, diced

  • 1 tbsp Italian seasoning


Instructions

  • Prepare the Eggplant:

    • Preheat oven to 400ยฐF (200ยฐC).

    • Slice eggplant lengthwise into โ…“-inch slices or into 2-inch rounds.

  • Bake the Eggplant:

    • Brush both sides with olive oil and place on a lined baking sheet.

    • Sprinkle with salt and pepper and bake for 10 minutes until soft.

  • Assemble the Pizzas:

    • Spread pizza sauce over each eggplant slice.

    • Sprinkle with some of the mozzarella and provolone.

    • Add mushrooms, onions, and bell peppers.

    • Top with the remaining cheese and sprinkle with Italian seasoning.

  • Broil & Serve:

    • Set oven to broil and bake for 5 minutes, or until cheese is golden and melted.

    • Remove from the oven and serve immediately.
