Ingredients

1/2 cup pizza sauce

1 cup mozzarella cheese, divided

1/2 cup provolone cheese, divided

1/4 cup mushrooms, chopped

1/4 cup onions, chopped

1/2 cup bell peppers, diced

Instructions

Prepare the Eggplant:

Preheat oven to 400ยฐF (200ยฐC).

Slice eggplant lengthwise into โ -inch slices or into 2-inch rounds.

Bake the Eggplant:
