These Egg Waffles are the ultimate breakfast or brunch treat! Fluffy scrambled eggs filled with cheese, veggies, and optional bacon or sausage, served with rich romesco sauce, creamy goat cheese, and topped with avocado. A fun and customizable dish that will impress any crowd!
Ingredients

For the Egg Waffles:

4 eggs

1 1/2 cups frozen hashbrowns (or grated potato)

1/4 cup bacon, pancetta, or cooked sausage (optional)

1/4 cup shredded cheddar cheese (or cheese of your choice)

A few shakes of garlic powder

1/2 โ 1 teaspoon salt

1/2 cup spinach, torn or cut into small pieces (optional)

2 ounces cheddar cheese (for topping)

For the Peppers and Garlic Confit:

3 tablespoons olive oil

1 lb. mini sweet peppers, sliced into rings

3 cloves garlic, sliced thin

1 tablespoon red wine vinegar

1/2 teaspoon salt

For the Toppings:

1/4 cup goat cheese
-
1 avocado
-
1/4 cup romesco sauce (store-bought or homemade)

2 tablespoons chives
-
2 tablespoons hot sauce (optional)

Instructions

Prepare the Peppers and Garlic Confit:

Heat olive oil in a skillet over medium heat. Add sweet peppers and sautรฉ until brown and soft (20-30 minutes), stirring occasionally for even browning.

Add garlic during the last 10-15 minutes of cooking to soften and brown.

In the last 5 minutes, add red wine vinegar to add a tangy flavor and deglaze any browned bits from the pan.

Make the Egg Waffle Base:

In a bowl, mix together the eggs, hashbrowns (or grated potato), bacon (or other meats), shredded cheese, garlic powder, salt, and spinach (if using).

Cook the Egg Waffles:

Preheat a nonstick waffle maker. Spray with cooking spray if necessary.

Pour 1/2โ3/4 cup of the egg mixture onto the waffle maker (amount will depend on your waffle maker size).

Place cheese chunks on top, close the lid, and cook until the waffle is golden and the eggs are set (about 1-2 minutes). If not fully cooked, flip or cook for an additional minute.

Top the Waffles:

Carefully remove the waffles and top with goat cheese, peppers and garlic confit, romesco sauce, avocado, chives, and hot sauce. Serve and enjoy!
