- 1/2 cup shredded sharp cheddar cheese
- 1/4 teaspoon fine salt
- Pinch of black pepper
- Fresh chives, roughly chopped
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray.
- In a medium bowl, whisk together the eggs, cottage cheese, shredded cheddar, salt, and pepper until smooth.
- Pour the egg mixture evenly into the prepared muffin cups.
- Sprinkle fresh chives on top of each egg cup.
- Bake for 20–25 minutes, or until the egg bites are set and lightly golden on top.
- Remove from oven and let cool for a few minutes before serving.
