- 6 cups low-sodium chicken broth
- 1-inch piece fresh ginger, thinly sliced
- 1 clove garlic, minced
- 20 mini frozen wontons (chicken cilantro recommended)
- 1 1/2 cups sliced shiitake mushrooms
- 4 baby bok choy, halved lengthwise
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Scallions, sliced (green parts only, for garnish)
Instructions
- In a large pot, bring the chicken broth to a boil.
- Smash the ginger with the side of a knife to release flavor, then add it to the pot along with the garlic. Cover and cook for 5 minutes.
- Add the bok choy and let it cook for another 5 minutes.
- Stir in the frozen wontons and mushrooms, then simmer for 2-3 minutes until the wontons are heated through and the bok choy is tender.
- Mix in the soy sauce and sesame oil.
- Divide the soup into four bowls and garnish with scallions. Serve hot.
Notes
- For extra flavor, add a dash of white pepper or chili oil.
- Swap chicken broth for vegetable broth to make it vegetarian with veggie wontons.
- Serve with a side of steamed rice or dumplings for a heartier meal.
