This quick and easy wonton soup is packed with fresh vegetables and delicious flavors, ready in under 15 minutes thanks to frozen wontons! A comforting, light, and satisfying meal perfect for lunch or dinner.


Ingredients

  • 6 cups low-sodium chicken broth
  • 1-inch piece fresh ginger, thinly sliced
  • 1 clove garlic, minced
  • 20 mini frozen wontons (chicken cilantro recommended)
  • 1 1/2 cups sliced shiitake mushrooms
  • 4 baby bok choy, halved lengthwise
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Scallions, sliced (green parts only, for garnish)

Instructions

  • In a large pot, bring the chicken broth to a boil.
  • Smash the ginger with the side of a knife to release flavor, then add it to the pot along with the garlic. Cover and cook for 5 minutes.
  • Add the bok choy and let it cook for another 5 minutes.
  • Stir in the frozen wontons and mushrooms, then simmer for 2-3 minutes until the wontons are heated through and the bok choy is tender.
  • Mix in the soy sauce and sesame oil.
  • Divide the soup into four bowls and garnish with scallions. Serve hot.

Notes

  • For extra flavor, add a dash of white pepper or chili oil.
  • Swap chicken broth for vegetable broth to make it vegetarian with veggie wontons.
  • Serve with a side of steamed rice or dumplings for a heartier meal.
