Ingredients

  • Olive oil spray
  • 2 shallots, sliced
  • 5 oz fresh spinach
  • 6 eggs
  • 3/4 tsp kosher salt
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 cup fat-free feta cheese

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Slice the shallots and spray a frying pan with olive oil spray. Add the shallots and cook for about 5 minutes until tender.
  3. Add the spinach leaves to the pan and cover with a lid to wilt the spinach.
  4. Spray the bottom of a 2.5-quart casserole dish with nonstick cooking spray. Layer the spinach and shallot mixture at the bottom of the dish.
  5. In a bowl, whisk together the eggs, salt, oregano, and garlic powder until well combined.
  6. Pour the egg mixture over the spinach and shallot mixture in the baking dish. Sprinkle with the feta cheese.
  7. Bake at 350ยฐF for about 30 minutes or until the omelet is set and lightly golden on top.
