- Olive oil spray
- 2 shallots, sliced
- 5 oz fresh spinach
- 6 eggs
- 3/4 tsp kosher salt
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 cup fat-free feta cheese
Instructions
- Preheat your oven to 350ยฐF (175ยฐC).
- Slice the shallots and spray a frying pan with olive oil spray. Add the shallots and cook for about 5 minutes until tender.
- Add the spinach leaves to the pan and cover with a lid to wilt the spinach.
- Spray the bottom of a 2.5-quart casserole dish with nonstick cooking spray. Layer the spinach and shallot mixture at the bottom of the dish.
- In a bowl, whisk together the eggs, salt, oregano, and garlic powder until well combined.
- Pour the egg mixture over the spinach and shallot mixture in the baking dish. Sprinkle with the feta cheese.
- Bake at 350ยฐF for about 30 minutes or until the omelet is set and lightly golden on top.
