- 2 tsp cumin

- 1 tsp coriander

- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp kosher salt
Instructions
- Preheat oven to 425°F. Line a sheet pan with parchment paper.
- In a large bowl, toss cubed chicken and sliced onions with olive oil and all spices until well coated.
- Spread the mixture on the sheet pan in a single layer.
- Roast for 20–25 minutes, flipping halfway through, until chicken is cooked through and edges are golden.
- Optional: broil for 1–2 minutes for extra crispy edges.
- Let rest a few minutes before serving in wraps, bowls, or with your favorite sides.

- Marinate chicken with spices up to 24 hours ahead for deeper flavor.
- Don’t overcrowd the sheet pan to allow proper browning.
