- 1/4 tsp ground saffron
- 3 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 roma tomatoes, diced
- 1/2 red bell pepper
- 1 tsp paprika
- 2 cups short grain rice, rinsed
- 1 tsp kosher salt
- 5 cups vegetable stock
- 1/2 cup frozen peas
- 1 lb mussels, cleaned
- 8โ10 large shrimp, peeled and tail-on
- 8 oz calamari, thawed
- 2 tbsp parsley, chopped
Instructions
- In a small bowl, combine the saffron with a little warm water and set aside to bloom.
- Heat olive oil in a large pan or paella pan over medium heat. Add the diced onion and garlic, sautรฉing until soft and fragrant, about 3-4 minutes.
- Add the diced tomatoes and red bell pepper to the pan, cooking for another 5 minutes until softened.
- Stir in the paprika and rinse the rice under cold water, then add it to the pan. Stir to coat the rice with the oil and spices.
- Pour in the vegetable stock, saffron mixture, and kosher salt. Bring the mixture to a boil, then reduce the heat to low, covering the pan and simmering for 15 minutes, until the rice is nearly cooked and the liquid has absorbed.
- Add the peas, mussels, shrimp, and calamari to the pan. Cover and cook for another 5-7 minutes, or until the seafood is cooked through and the mussels have opened.
- Remove the pan from the heat, and let the paella sit, covered, for 5 minutes to allow the flavors to meld together.
- Garnish with freshly chopped parsley and serve immediately.
Notes
- Make sure to discard any mussels that donโt open during cooking.
- If you canโt find short-grain rice, you can use medium-grain rice as a substitute.
- This recipe can be made in a traditional paella pan, but a large skillet or sautรฉ pan works just as well.
