Description

Easy Seafood Paella is a vibrant Spanish dish filled with a mix of mussels, shrimp, and calamari, perfectly cooked in a flavorful saffron-infused rice base. This quick and simple recipe brings the taste of the Mediterranean to your home.


Ingredients

  • 1/4 tsp ground saffron
  • 3 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 roma tomatoes, diced
  • 1/2 red bell pepper
  • 1 tsp paprika
  • 2 cups short grain rice, rinsed
  • 1 tsp kosher salt
  • 5 cups vegetable stock
  • 1/2 cup frozen peas
  • 1 lb mussels, cleaned
  • 8โ€“10 large shrimp, peeled and tail-on
  • 8 oz calamari, thawed
  • 2 tbsp parsley, chopped

Instructions

  1. In a small bowl, combine the saffron with a little warm water and set aside to bloom.
  2. Heat olive oil in a large pan or paella pan over medium heat. Add the diced onion and garlic, sautรฉing until soft and fragrant, about 3-4 minutes.
  3. Add the diced tomatoes and red bell pepper to the pan, cooking for another 5 minutes until softened.
  4. Stir in the paprika and rinse the rice under cold water, then add it to the pan. Stir to coat the rice with the oil and spices.
  5. Pour in the vegetable stock, saffron mixture, and kosher salt. Bring the mixture to a boil, then reduce the heat to low, covering the pan and simmering for 15 minutes, until the rice is nearly cooked and the liquid has absorbed.
  6. Add the peas, mussels, shrimp, and calamari to the pan. Cover and cook for another 5-7 minutes, or until the seafood is cooked through and the mussels have opened.
  7. Remove the pan from the heat, and let the paella sit, covered, for 5 minutes to allow the flavors to meld together.
  8. Garnish with freshly chopped parsley and serve immediately.

Notes

  • Make sure to discard any mussels that donโ€™t open during cooking.
  • If you canโ€™t find short-grain rice, you can use medium-grain rice as a substitute.
  • This recipe can be made in a traditional paella pan, but a large skillet or sautรฉ pan works just as well.
