Description

These Easy Pumpkin Pretzel Bites are a quick, healthy, and delicious snack made with just three ingredientsโ€”Greek yogurt, pumpkin, and self-rising flour. Coated in a sweet cinnamon sugar, they are perfect for fall snacking.


Ingredients

  • 1 cup plain Greek yogurt
  • 1/3 cup pumpkin puree
  • 2 cups self-rising flour
  • 3 tablespoons butter, melted
  • 2 teaspoons cinnamon
  • 1/3 cup granulated sugar

Instructions

  1. Preheat the oven to 350ยฐF and line a cookie sheet with parchment paper.
  2. In the bowl of an electric mixer, add Greek yogurt, pumpkin, and self-rising flour. Mix on medium speed for about 1 minute, or until the flour is incorporated. Do not overmix.
  3. Transfer the dough to a floured surface. If itโ€™s sticky, lightly sprinkle some flour on top. Roll the dough into a rectangle shape about ยฝ inch thick.
  4. Use a knife or bench scraper to cut the dough into small rectangles (about 36 squares). The cuts donโ€™t need to be perfect.
  5. Lightly flour your hands and roll each dough piece into a ball, shaping them like small pretzels. Again, the shape doesnโ€™t need to be perfect.
  6. Place each pretzel piece on the prepared baking sheet.
  7. Bake for 10 minutes, flipping each piece halfway through the baking time.
  8. While the pretzel bites are baking, melt the butter. In a separate bowl, mix the sugar and cinnamon together.
  9. Once the bites are done baking, brush or dip each pretzel bite in the melted butter and roll in the cinnamon sugar mixture.
  10. Enjoy warm, or store and reheat in the air fryer the next day.

Notes

  • For best results, enjoy these pretzel bites warm right out of the oven.
  • If the dough is too sticky to handle, sprinkle a little extra flour as you roll it out.
