These Easy Pumpkin Pretzel Bites are a quick, healthy, and delicious snack made with just three ingredientsโGreek yogurt, pumpkin, and self-rising flour. Coated in a sweet cinnamon sugar, they are perfect for fall snacking.

- 1 cup plain Greek yogurt
- 1/3 cup pumpkin puree
- 2 cups self-rising flour
- 3 tablespoons butter, melted
- 2 teaspoons cinnamon
- 1/3 cup granulated sugar
Instructions
- Preheat the oven to 350ยฐF and line a cookie sheet with parchment paper.
- In the bowl of an electric mixer, add Greek yogurt, pumpkin, and self-rising flour. Mix on medium speed for about 1 minute, or until the flour is incorporated. Do not overmix.
- Transfer the dough to a floured surface. If itโs sticky, lightly sprinkle some flour on top. Roll the dough into a rectangle shape about ยฝ inch thick.
- Use a knife or bench scraper to cut the dough into small rectangles (about 36 squares). The cuts donโt need to be perfect.
- Lightly flour your hands and roll each dough piece into a ball, shaping them like small pretzels. Again, the shape doesnโt need to be perfect.
- Place each pretzel piece on the prepared baking sheet.
- Bake for 10 minutes, flipping each piece halfway through the baking time.
- While the pretzel bites are baking, melt the butter. In a separate bowl, mix the sugar and cinnamon together.
- Once the bites are done baking, brush or dip each pretzel bite in the melted butter and roll in the cinnamon sugar mixture.
- Enjoy warm, or store and reheat in the air fryer the next day.
Notes
- For best results, enjoy these pretzel bites warm right out of the oven.
- If the dough is too sticky to handle, sprinkle a little extra flour as you roll it out.
