Description

This Easy Pizza Stuffed Chicken is the perfect way to enjoy all the flavors of pizza in a low-carb, high-protein dish. Juicy chicken breasts are stuffed with marinara, melty mozzarella, and savory pepperoni, then topped with a seasoned parmesan crust. A quick and delicious dinner ready in just 25 minutes!


Ingredients

  • 3 boneless, skinless chicken breasts
  • 1/3 cup marinara (or pesto)
  • 1 cup shredded mozzarella cheese
  • 2 oz pepperoni slices
  • Salt and pepper to taste

For the Top Crust:

 

  • 1/3 cup grated parmesan cheese
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano

Instructions

  • Preheat oven to 425℉ (220℃) or air fryer to 400℉ (200℃). Line a small baking sheet with parchment paper.
  • Slice each chicken breast in half lengthwise, creating a “flap” or “book” shape, but keeping it intact.
  • Season the inside with salt and pepper. Spread 2 tbsp marinara inside each chicken breast.
  • Divide the mozzarella evenly among the three chicken breasts, then top each with 7 slices of pepperoni.
  • Fold the chicken over and press down gently. Season the tops with salt and pepper.
  • In a small bowl, mix parmesan, onion powder, garlic powder, paprika, and oregano.
  • Sprinkle the seasoning mixture evenly over the tops of the stuffed chicken.
  • Bake for 20-25 minutes in the oven or 18-20 minutes in the air fryer, until the thickest part of the chicken reaches an internal temperature of 165℉ (75℃).

 

  • Serve hot and enjoy!

Notes

  • Use turkey pepperoni for a lighter option.
  • Swap mozzarella with provolone or cheddar for a flavor twist.
  • Serve with a side salad or roasted vegetables for a complete meal.
