Description

This One Bowl Coconut Lemon Slice is a breeze to make, tasting like a delicious lemon blondie with a sweet coconut twist. Perfect for a quick and easy treat!


Ingredients

  • 150g self-raising flour (1 cup)
  • 100g desiccated coconut (1 cup)
  • 115g butter, melted (4 oz)
  • 165g caster sugar (3/4 cup)
  • 2 large eggs (60g)
  • 120g full cream milk (1/2 cup)
  • Pinch of salt
  • 2 tsp vanilla essence
  • Lemon Icing:
  • 1 1/2 cups icing sugar
  • 70g softened butter
  • 23 tablespoons freshly squeezed lemon juice
  • Zest of 12 lemons to garnish

Instructions

  1. Preheat oven: Set oven to 180°C (355°F), bake setting, not fan. Line a rectangular baking tin (18.5 x 25 cm / 7 1/4 x 9 3/4 inches) with parchment paper.
  2. Prepare the batter: Melt butter and let it cool in the pan. Add milk, vanilla, eggs, and sugar to the butter, whisk until well combined. Add salt, coconut, and flour, whisk until smooth with no lumps of flour or coconut.
  3. Bake: Pour the mixture into the prepared tin. Bake for 20-25 minutes or until a skewer comes out clean. Remove from the tin and cool on a rack.
  4. Make the icing: Mix butter with icing sugar until smooth. Gradually add lemon juice to achieve a smooth, spreadable consistency.
  5. Ice and garnish: Once the slice has cooled, ice it and sprinkle with lemon zest. Serve and enjoy!
