- 2 pounds chicken breasts
- 1 tablespoon olive oil
- 1/2 cup mild salsa (medium if you like spicy)
- 3โ4 tablespoons brown sugar
- 1 (4 oz.) can mild diced green chilies
- 1 (14.5 oz.) can fire roasted diced tomatoes, drained (or regular)
- 1 tablespoon chili powder
- 1 1/2 teaspoons salt
- 1 teaspoon EACH ground cumin, garlic powder, onion powder
- 1/2 teaspoon EACH smoked paprika, dry oregano, pepper
- 1/2 teaspoon ground chipotle chili pepper (optional for more heat)
- 1 teaspoon liquid smoke
- Hot sauce to taste
Instructions
- In a slow cooker, combine all the ingredients except the chicken. Stir well to combine.
- Place the chicken breasts into the slow cooker and spoon some of the sauce over the top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
- Remove the chicken from the crockpot, shred with two forks, and return to the sauce. Stir to coat the chicken in the sauce.
- Serve the chicken with tortillas, rice, or as desired. Add hot sauce to taste for extra spice.
Notes
- This recipe works great for tacos, burritos, or even over rice as a main dish.
- If you prefer more heat, increase the chipotle chili pepper or add extra hot sauce.
- For a richer flavor, you can use a combination of regular and smoked paprika.
