Description

Ingredients

  • 1 lb elbow macaroni
  • 6 oz cheddar cheese, cubed
  • 1/2 red onion, minced
  • 4 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup fresh dill
  • 2 tablespoons sugar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Cook macaroni according to package instructions until al dente. Drain, rinse under cold water, and set aside.
  2. In a large bowl, combine macaroni, cheddar cheese cubes, red onion, celery, red bell pepper, and peas.
  3. In a separate bowl, whisk together mayonnaise, apple cider vinegar, fresh dill, sugar, Dijon mustard, salt, and pepper until smooth.
  4. Pour the dressing over the macaroni mixture and toss until everything is evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

  • For extra creaminess, stir in an additional 2–3 tablespoons of mayonnaise before serving.
