Description

A light and zesty dessert that is both simple and mouthwatering, perfect for any occasion.

Ingredients

Units Scale

For the Cake

  • 1 box of lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs

For the Jello

  • 1 cup boiling water
  • 1 package lemon Jello
  • 1 cup cold water

For the Topping

  • 1 container whipped topping

Instructions

  1. Bake the Cake: Begin by preheating your oven to 350ยฐF (175ยฐC). In a large mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix well until the batter is smooth. Pour the batter into a greased 9ร—13 inch baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Prepare the Jello: While the cake is baking, dissolve the lemon Jello in 1 cup of boiling water, stirring until it is completely dissolved. Add 1 cup of cold water to the mixture and set it aside to cool.
  3. Poke the Cake: Once the cake is done baking, remove it from the oven and let it cool for about 10 minutes. Use the handle of a wooden spoon or a fork to poke holes all over the top of the cake, about 1 inch apart.
  4. Add the Jello: Pour the prepared Jello mixture evenly over the cake, ensuring it seeps into the holes. Allow the cake to cool completely at room temperature, then refrigerate for at least 2 hours to set.
  5. Top with Whipped Topping: After the cake has set, spread the whipped topping evenly over the top. For an extra touch, you can garnish with lemon zest or fresh berries.

Notes

  • Donโ€™t Rush the Cooling: Allow the cake to cool completely before adding the Jello for the best flavor absorption.
  • Use Fresh Ingredients: Fresh eggs and high-quality cake mix will enhance the overall taste of your cake.
  • Chill Before Serving: Refrigerating the cake for a few hours allows the flavors to meld beautifully.
  • Poke Deep Holes: The deeper the holes, the more Jello flavor can infuse into the cake.
  • Experiment with Toppings: Feel free to get creative with different toppings like nuts, coconut, or additional fruit.
