Description

This Healthy Ground Chicken Meatloaf is a lighter take on the classic dish. Using ground chicken instead of beef, itโ€™s topped with a zesty tomato glaze for an added burst of flavor. Perfect for a healthier family dinner!


Ingredients

  • 1.3lbs ground chicken
  • 1 large egg
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon ketchup
  • 1 tablespoon dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic paste
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • For the tomato glaze:
  • 1/4 cup ketchup
  • 1 tablespoon chili sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon maple syrup or honey

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and line a medium-sized baking pan with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, egg, olive oil, onion, breadcrumbs, parmesan cheese, ketchup, dijon mustard, Worcestershire sauce, garlic paste, salt, and pepper. Mix well to combine, using your hands if needed.
  3. Transfer the mixture to the lined baking pan and shape it into a 10ร—6 loaf. Place the meatloaf in the center of the pan.
  4. Bake in the preheated oven for 40-45 minutes.
  5. While the meatloaf is baking, prepare the tomato glaze by combining the ketchup, chili sauce, Worcestershire sauce, and maple syrup (or honey) in a small bowl.
  6. Once the meatloaf is done, remove it from the oven, increase the oven temperature to 400ยฐF (200ยฐC), and spread the tomato glaze evenly over the entire loaf.
  7. Return the meatloaf to the oven and bake for an additional 7-10 minutes.
  8. Remove from the oven and let it rest for at least 10 minutes before slicing and serving.

Notes

  • If you donโ€™t have garlic paste, minced garlic can be substituted.
  • Feel free to use turkey instead of chicken for a similar result.
  • Make sure to let the meatloaf rest before slicing to keep it from falling apart.
