Description

Mini focaccia-style muffins made from frozen dinner rolls, topped with juicy cherry tomatoes, olives, feta, Parmesan, and a touch of oregano for a flavorful and easy snack or side.


Ingredients

  • 12 frozen dinner rolls
  • Cherry tomatoes, sliced, to taste
  • Black olives, sliced, to taste
  • Green olives, sliced, to taste
  • Feta cheese, crumbled, to taste
  • 6 teaspoons grated Parmesan cheese, to taste
  • 1 1/2 teaspoons dried oregano
  • Dash of salt
  • 12 teaspoons olive oil, for drizzling before toppings

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Place frozen dinner rolls in each muffin cup, pressing slightly to fit.
  3. Drizzle each roll with 1 teaspoon olive oil.
  4. Top with sliced cherry tomatoes, black and green olives, crumbled feta, and grated Parmesan.
  5. Sprinkle with dried oregano and a pinch of salt.
  6. Bake for 15–20 minutes, or until rolls are golden and cheese is melted.
  7. Remove from oven, let cool slightly, then serve warm.

Notes

  • You can add fresh basil or thyme for extra flavor.
  • Substitute feta with goat cheese if desired.
  • These muffins are best served warm but can be stored in an airtight container for a day and reheated before serving.
