Mini focaccia-style muffins made from frozen dinner rolls, topped with juicy cherry tomatoes, olives, feta, Parmesan, and a touch of oregano for a flavorful and easy snack or side.

- 12 frozen dinner rolls
- Cherry tomatoes, sliced, to taste
- Black olives, sliced, to taste
- Green olives, sliced, to taste
- Feta cheese, crumbled, to taste
- 6 teaspoons grated Parmesan cheese, to taste
- 1 1/2 teaspoons dried oregano
- Dash of salt
- 12 teaspoons olive oil, for drizzling before toppings
Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Place frozen dinner rolls in each muffin cup, pressing slightly to fit.
- Drizzle each roll with 1 teaspoon olive oil.
- Top with sliced cherry tomatoes, black and green olives, crumbled feta, and grated Parmesan.
- Sprinkle with dried oregano and a pinch of salt.
- Bake for 15–20 minutes, or until rolls are golden and cheese is melted.
- Remove from oven, let cool slightly, then serve warm.
Notes
- You can add fresh basil or thyme for extra flavor.
- Substitute feta with goat cheese if desired.
- These muffins are best served warm but can be stored in an airtight container for a day and reheated before serving.
