Description

This Easy Chuck Roast recipe is a simple and flavorful way to prepare a tender, juicy roast with minimal effort. Perfect for family dinners, it’s seasoned simply with salt and pepper, then slow-cooked until melt-in-your-mouth tender. Butter is optional for extra richness, making this dish versatile and comforting.


Ingredients

  • 1 boneless beef chuck roast, around 4 pounds
  • 3 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • Optional: 6 tbsp unsalted butter

Instructions

  1. Preheat oven: Set oven to 325°F (163°C).
  2. Season roast: Pat chuck roast dry with paper towels. Generously season with kosher salt and black pepper on all sides.
  3. Sear: Heat a large Dutch oven or heavy oven-safe pot over medium-high heat. Sear roast for 3–4 minutes per side until browned.
  4. Optional butter: Place butter over the top of the roast for extra richness.
  5. Cook: Cover pot tightly with lid or foil and transfer to oven. Roast for 3–4 hours, or until the beef is fork-tender.
  6. Rest & serve: Remove from oven and let rest for 10 minutes before slicing or shredding. Serve with pan juices.

Notes

  • Add carrots, potatoes, and onions to the pot for a complete one-pot meal.
  • If you prefer a slow cooker method, cook on LOW for 8–9 hours or HIGH for 5–6 hours.
  • For a deeper flavor, deglaze the pan with a splash of red wine or beef broth before roasting.
