- 1 boneless beef chuck roast, around 4 pounds
- 3 tsp kosher salt
- 1 tsp freshly ground black pepper
- Optional: 6 tbsp unsalted butter
Instructions
- Preheat oven: Set oven to 325°F (163°C).
- Season roast: Pat chuck roast dry with paper towels. Generously season with kosher salt and black pepper on all sides.
- Sear: Heat a large Dutch oven or heavy oven-safe pot over medium-high heat. Sear roast for 3–4 minutes per side until browned.
- Optional butter: Place butter over the top of the roast for extra richness.
- Cook: Cover pot tightly with lid or foil and transfer to oven. Roast for 3–4 hours, or until the beef is fork-tender.
- Rest & serve: Remove from oven and let rest for 10 minutes before slicing or shredding. Serve with pan juices.
Notes
- Add carrots, potatoes, and onions to the pot for a complete one-pot meal.
- If you prefer a slow cooker method, cook on LOW for 8–9 hours or HIGH for 5–6 hours.
- For a deeper flavor, deglaze the pan with a splash of red wine or beef broth before roasting.
