Scale
- 1 1/4 cups sugar (for caramelizing)
- 1 can sweetened condensed milk (14 oz / 397g)
- 1 can whole milk (use same can as condensed milk)
- 1 can heavy cream and water (use same can, half water and half cream)
- 3.5 ounces semisweet chocolate, cut into chunks
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 4 eggs, at room temperature
- Whipped cream and chocolate shavings, to serve
Instructions
- Preheat oven to 350°F (175°C).
- Caramelize a flan pan or baking dish by melting sugar over medium heat until golden. Swirl to coat bottom evenly and set aside.
- Melt semisweet chocolate with cocoa powder in a saucepan over low heat until smooth. Let cool slightly.
- In a large bowl, whisk together sweetened condensed milk, whole milk, cream-water mixture, eggs, vanilla, and salt. Stir in melted chocolate until well combined.
- Pour custard mixture over caramel in the prepared pan.
- Place flan pan in a larger baking dish and add hot water to create a water bath, filling halfway up the sides of the flan pan.
- Bake 50-60 minutes until custard is set but slightly jiggly in the center.
- Cool to room temperature, then refrigerate at least 4 hours or overnight.
- To serve, run a knife around edges, invert onto a plate, and top with whipped cream and chocolate shavings.
Notes
- Use room-temperature eggs to avoid curdling.
- Ensure caramel is evenly spread for a smooth base.
- Water bath prevents cracking and ensures smooth texture.
- Can be made a day ahead; flavors improve after chilling.
