- 4 boneless, skinless chicken thighs (or Trader Joeโs shawarma chicken thighs)
- 4 pita bread rounds
- 1 cup tahini sauce
- 1/2 cup amba sauce
- 2 cups Israeli salad (diced cucumber, tomatoes, onions, parsley, lemon juice, olive oil)
- 4โ5 Yukon gold potatoes (or crispy roasted potatoes)
- Salt and pepper to taste
- For the Shawarma Marinade:
- 2 cloves garlic, minced
- Juice of 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Prepare the Chicken: Season the chicken thighs with salt, pepper, and shawarma spices (cumin, coriander, turmeric, garlic powder, paprika). If using pre-marinated chicken thighs, skip this step. Heat a pan with oil over medium heat and cook the chicken thighs for 7-8 minutes per side, or until they reach an internal temperature of 165ยฐF. Let the chicken rest for a few minutes before slicing into strips.
- Prepare the Potatoes: Preheat the oven to 400ยฐF (200ยฐC). Cut the Yukon gold potatoes into bite-sized pieces, toss with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until crispy and golden.
- Assemble the Pitas: Warm the pita bread in the oven or on a hot pan. Spread a generous amount of tahini sauce on each pita. Layer with Israeli salad, followed by sliced shawarma chicken. Drizzle with amba sauce and add the roasted potatoes inside or on the side of the pita.
