Description

  • 1/3 cup olive oil
  • 1/2 lemon, juiced + zest
  • 1 tbsp garlic paste (or 2 cloves minced garlic)
  • 1 tbsp chopped fresh parsley
  • 1 tsp all-purpose seasoning (like Lawryโ€™s or Goya)
  • 1 tsp smoked paprika
  • Kosher salt, to taste
  • Seafood seasoning (optional)

Instructions

Step 1: Prep the Oven & Baking Dish

  • Preheat your oven to 400ยฐF and position the rack in the top third.
  • Line a baking dish with lemon slices to infuse flavor and prevent sticking.

Step 2: Make the Marinade

  • In a small bowl, whisk together olive oil, lemon juice & zest, garlic, parsley, all-purpose seasoning, smoked paprika, and salt.

Step 3: Bake the Cod

  • Place the cod fillet on top of the lemon slices in the baking dish.
  • Pour the marinade over the fish, using a brush or spoon to coat evenly.
  • Bake at 400ยฐF for 20 minutes, or until the fish flakes easily with a fork.

Step 4: Optional Broil for a Golden Finish

  • For a slightly crispy, golden top, broil the cod for the last 2 minutes.
