Description

These crispy, golden Avocado Egg Rolls are packed with fresh guacamole and fried to perfection. Inspired by the Cheesecake Factoryโ€™s famous appetizer, this easy homemade version is even more delicious at a fraction of the cost! Serve them with a creamy cilantro dipping sauce for the ultimate restaurant-style snack.

For the Egg Rolls

  • 3 avocados, halved, peeled, and seeded
  • 1/2 cup tomatoes, diced
  • 1/3 cup onion, diced
  • 2 tablespoons fresh cilantro, chopped
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • 12 egg roll wrappers
  • 1 cup vegetable oil (for frying)

For the Cilantro Dipping Sauce

  • 1/2 cup fresh cilantro leaves, loosely packed
  • 1/4 cup sour cream
  • 1 tablespoon mayonnaise
  • 1 jalapeรฑo, seeded and deveined
  • Juice of 1 lime
  • 1 clove garlic
  • Salt and freshly ground black pepper, to taste

Instructions

Prepare the Dipping Sauce:

  1. In a food processor, blend cilantro, sour cream, jalapeรฑo, mayonnaise, garlic, and lime juice until smooth.
  2. Season with salt and black pepper to taste. Set aside.

Make the Avocado Filling:

  1. In a medium bowl, mash the avocados gently with a fork.
  2. Stir in tomatoes, onion, cilantro, lime juice, salt, and black pepper.

Assemble the Egg Rolls:

  1. Lay an egg roll wrapper on a flat surface.
  2. Spoon about 2 tablespoons of the avocado mixture into the center.
  3. Fold the bottom edge tightly over the filling, fold in the sides, and roll to the top.
  4. Dab the top edge with water to seal. Repeat with remaining wrappers.

Fry the Egg Rolls:

  1. Heat vegetable oil in a skillet or Dutch oven over medium-high heat.

  2. Fry egg rolls in batches, cooking for 2-3 minutes per side until golden and crispy.

  3. Transfer to a paper towel-lined plate to drain excess oil.

  4. Serve immediately with cilantro dipping sauce. Enjoy!
