- 1 box of strawberry cake mix, any brand
- 2 eggs
- 1/3 cup vegetable oil
- 2 tablespoons flour
- 2 teaspoons lemon juice
- 1 tablespoon lemon zest
- For the frosting:
- 2 cups powdered sugar
- 4–5 tablespoons lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, flour, lemon juice, and lemon zest. Mix until everything is well combined.
- Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set and the tops look slightly cracked.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- While the cookies cool, prepare the frosting by whisking together the powdered sugar and lemon juice until smooth. Add more lemon juice if you prefer a thinner consistency.
- Once the cookies are cool, drizzle the frosting over the top of each cookie or spread it on with a knife.
- Let the frosting set for a few minutes before serving. Enjoy your soft, chewy strawberry lemonade cookies!
Notes
- For a more intense lemon flavor, you can add additional lemon zest to the frosting or dough.
- If you prefer a thicker frosting, use less lemon juice until you reach your desired consistency.
