Description

Flaky golden puff pastry shaped like an egg and baked with a sunny side up egg in the center, finished with fresh chives and served with avocado and crisp lettuce. A festive and easy brunch idea perfect for spring mornings.


Ingredients

  • 1 sheet puff pastry, thawed but cold
  • 4 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons fresh chives, chopped
  • 1 whole avocado, sliced
  • 4 large lettuce leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Cut the puff pastry sheet into 4 egg shaped outlines, leaving a slightly raised border around each piece.
  3. Sprinkle shredded mozzarella cheese into the center of each pastry, keeping it within the border.
  4. Carefully crack one egg into the center of each pastry shape.
  5. Season each egg lightly with salt and black pepper.
  6. Bake for 12 to 15 minutes, until the pastry is golden and puffed and the egg white is set.
  7. Remove from the oven and sprinkle chopped fresh chives over the top.
  8. Serve warm with sliced avocado and fresh lettuce on the side.

Notes

  • Keep the puff pastry cold before baking for best rise.
  • Create a slight well in the center to help hold the egg in place.
  • Bake on the middle rack for even cooking.
  • Best served fresh for maximum flakiness.
