- 1 sheet puff pastry, thawed but cold
- 4 large eggs
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons fresh chives, chopped
- 1 whole avocado, sliced
- 4 large lettuce leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- Cut the puff pastry sheet into 4 egg shaped outlines, leaving a slightly raised border around each piece.
- Sprinkle shredded mozzarella cheese into the center of each pastry, keeping it within the border.
- Carefully crack one egg into the center of each pastry shape.
- Season each egg lightly with salt and black pepper.
- Bake for 12 to 15 minutes, until the pastry is golden and puffed and the egg white is set.
- Remove from the oven and sprinkle chopped fresh chives over the top.
- Serve warm with sliced avocado and fresh lettuce on the side.
Notes
- Keep the puff pastry cold before baking for best rise.
- Create a slight well in the center to help hold the egg in place.
- Bake on the middle rack for even cooking.
