Pistachio Knafeh Filling:
- 3 cups kataifi (100g)
- 4 tbsp unsalted butter, melted (56g)
- 3/4 cup pistachio cream (210g)
- Pinch of salt
Chocolate Glaze:
- 100g chocolate (semi-sweet or preferred type)
- 100g heavy cream (1/3 cup + 1 tbsp)
- 1 tbsp oil
Assembly:
- 12 King’s Hawaiian Sweet Rolls (1 pack)
Optional Icing:
- 1 cup powdered sugar
- 2–4 tbsp heavy cream
Instructions
1. Prepare the Pistachio Knafeh Filling:
- Add kataifi to a large pan and break any long strands into smaller pieces.
- Mix in melted butter and cook over medium-low heat for about 10 minutes, stirring continuously until crispy and golden brown.
- Remove from heat and mix in pistachio cream and a pinch of salt.
- Let it cool for 5-10 minutes before using.
2. Make the Chocolate Glaze:
- In a microwave-safe bowl, combine chocolate, cream, and oil.
- Microwave in 20-second intervals, stirring between each, until smooth and glossy.
3. Assemble the Donut Rolls:
- Separate the rolls and use a sharp knife to cut a small hole on the side.
- Gently open the holes into pockets using your fingers.
- Fill each roll with crispy pistachio knafeh filling using a spoon.
- Dip each roll into the warm chocolate glaze, letting excess drip off.
- Place on a wire rack and let the glaze set for 5-10 minutes.
4. Optional Icing:
- Mix powdered sugar with heavy cream, adding 1 tbsp at a time, until a smooth drizzling consistency is achieved.
- Transfer to a piping bag, cut a small hole, and drizzle over donut rolls.
- Let set for 5 minutes before serving.
5. Serve & Enjoy Fresh!
Notes
- Use store-bought pistachio cream or make your own by blending roasted pistachios with sugar and cream.
- Make sure the chocolate glaze is warm, not hot for easy dipping.
- For extra crunch, sprinkle chopped pistachios on top of the glaze before it sets.
