Description

Soft, tender muffins rolled in melted butter and coated with cinnamon sugar, Dirt Bombs are the perfect doughnut-muffin hybrid for breakfast or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar (for batter)
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon (for batter)
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs, lightly beaten
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted (for batter)
  • 1/2 cup unsalted butter, melted (for topping)
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • Cooking spray

Instructions

  1. Preheat oven to 375°F (190°C) and spray a 12-cup muffin tin with cooking spray.
  2. In a bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk eggs, milk, and melted butter until combined.
  4. Pour wet ingredients into dry and mix gently until just combined.
  5. Divide batter evenly into muffin cups, filling each about ¾ full.
  6. Bake for 18–20 minutes, or until golden and a toothpick comes out clean.
  7. Cool muffins in pan for 5 minutes, then transfer to a wire rack.
  8. While warm, dip each muffin in melted butter and roll in cinnamon sugar mixture.
  9. Serve warm with coffee, milk, or hot chocolate.

Notes

  • Don’t overmix the batter to keep muffins soft and fluffy.
  • Coat muffins while still warm for best butter and sugar absorption.
  • Use shallow bowls to make rolling easier and cleaner.
  • Store leftovers in an airtight container for up to 3 days.
