- 1.5 lbs boneless skinless chicken breasts, cut into 1-inch pieces
- 1 cup dill pickle juice
- 2 tbsp olive oil
- 2 tbsp ranch seasoning mix
- 1 tbsp chopped fresh dill (optional)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Wooden or metal skewers
Instructions
- In a large bowl or zip-top bag, combine chicken pieces and pickle juice. Marinate for at least 1 hour, or up to overnight for deeper flavor.
- Drain the chicken and pat dry. In a separate bowl, toss chicken with olive oil, ranch seasoning, garlic powder, onion powder, and dill.
- Thread chicken pieces onto skewers.
- Preheat grill or grill pan over medium-high heat. Lightly oil the grates.
- Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.
- Serve hot with dipping sauce, side salad, or over rice.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Add sliced pickles or cherry tomatoes between chicken pieces for extra flavor and presentation.
- These skewers can also be baked at 400°F (200°C) for 18–20 minutes.
- Pairs well with a side of ranch or dill yogurt dip.
