Description

A rustic French strawberry flaugnarde baked to golden perfection, filled with tender custard and juicy strawberries, lightly dusted with powdered sugar for an elegant yet simple dessert.


Ingredients

  • 2 cups fresh strawberries, halved
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup all purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F and lightly grease a 9 inch round baking dish.
  2. In a mixing bowl whisk together eggs and granulated sugar until smooth.
  3. Add flour and salt, whisk until fully incorporated.
  4. Slowly pour in whole milk and heavy cream while whisking continuously until smooth.
  5. Stir in vanilla extract.
  6. Arrange the halved strawberries evenly in the prepared baking dish.
  7. Pour the custard batter gently over the strawberries.
  8. Bake for 35 to 40 minutes until the center is set but slightly soft and the edges are lightly golden.
  9. Allow to cool for 10 minutes, then dust with powdered sugar before serving if desired.

Notes

  • Do not overbake, the center should still have a slight jiggle.
  • If strawberries are very juicy, pat them dry before baking.
  • Serve warm or at room temperature for best texture.
