Description

A cozy and comforting mozzarella zucchini casserole layered with tender zucchini, rich marinara sauce, and bubbly golden mozzarella. This easy baked dish is vegetarian-friendly, budget-conscious, and perfect for weeknight dinners or make-ahead meals.


Ingredients

  • 4 medium zucchini, sliced into 1/4 inch rounds
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a mixing bowl, stir together marinara sauce, minced garlic, dried oregano, salt, and black pepper.
  3. Lightly grease a 9 by 13 inch baking dish with olive oil.
  4. Arrange a layer of zucchini slices on the bottom of the dish. Spoon sauce over the zucchini, then sprinkle mozzarella and a little parmesan on top. Repeat layers until all ingredients are used, finishing with cheese on top.
  5. Bake uncovered for 30 to 35 minutes, until the cheese is melted, bubbly, and lightly golden.
  6. Remove from oven and let rest for 10 minutes before slicing and serving.

Notes

  • Salt zucchini slices lightly and let them rest for 10 minutes, then pat dry to reduce excess moisture.
  • For a deeper golden top, broil for 2 to 3 minutes at the end, watching closely.
  • Let the casserole rest before slicing to help the layers set properly.
