- 4 medium zucchini, sliced into 1/4 inch rounds
- 2 cups shredded mozzarella cheese
- 2 cups marinara sauce
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- In a mixing bowl, stir together marinara sauce, minced garlic, dried oregano, salt, and black pepper.
- Lightly grease a 9 by 13 inch baking dish with olive oil.
- Arrange a layer of zucchini slices on the bottom of the dish. Spoon sauce over the zucchini, then sprinkle mozzarella and a little parmesan on top. Repeat layers until all ingredients are used, finishing with cheese on top.
- Bake uncovered for 30 to 35 minutes, until the cheese is melted, bubbly, and lightly golden.
- Remove from oven and let rest for 10 minutes before slicing and serving.
Notes
- Salt zucchini slices lightly and let them rest for 10 minutes, then pat dry to reduce excess moisture.
- For a deeper golden top, broil for 2 to 3 minutes at the end, watching closely.
- Let the casserole rest before slicing to help the layers set properly.
