Description

This Dark Chocolate Chunk Coconut Key Lime Pound Cake is a moist and tangy cake infused with key lime zest, rich coconut flavor, and studded with dark chocolate chunks for a decadent dessert experience.


Ingredients

  • 1 2/3 cups all-purpose flour + 2 tablespoons, divided
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup plain whole-milk Greek yogurt
  • 1 cup sugar
  • 4 large eggs + 1 egg yolk
  • 2 teaspoons grated lime or key lime zest (about 3 large limes or 4 small ones)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup coconut oil, at room temperature
  • 1 cup dark chocolate chunks

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, whisk together 1 2/3 cups flour, baking powder, and salt.
  3. In a large bowl, beat the Greek yogurt, sugar, eggs, egg yolk, lime zest, vanilla, and coconut oil until smooth and combined.
  4. Gradually fold in the flour mixture until just combined.
  5. Toss dark chocolate chunks with the remaining 2 tablespoons of flour and gently fold into the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and serve as desired.
