Description

These sweet and crunchy Dandy-do cookies are a fun and easy treat made with sweetened condensed milk, butter, brown sugar, and peanuts. With the addition of Ritz crackers, they have the perfect salty-sweet combination!

  • 3 tablespoons milk
  • 1 teaspoon vanilla
  • 1 cup peanuts, roughly chopped
  • 12 sleeves Ritz crackers

Instructions

  • Prepare the Cookie Sheet:
    • Line a cookie sheet with parchment paper and arrange crackers in a single layer.
  • Make the Caramel Mixture:
    • In a small saucepan, combine sweetened condensed milk, butter, and brown sugar. Cook over medium heat for 7-8 minutes, stirring often.
  • Add Milk, Vanilla, and Peanuts:
    • Reduce heat to low and whisk in milk, vanilla, and peanuts until smooth. Cook for 2 more minutes, or until the mixture thickens, then remove from heat.
  • Assemble the Cookies:
    • Use a cookie scoop to top each cracker with the caramel mixture.
  • Cool and Store:
    • Allow cookies to cool completely, then store them in an airtight container.
