- 1 (14 oz) can sweetened condensed milk
- 1/3 cup butter
- 1/3 cup brown sugar
- 3 tablespoons milk
- 1 teaspoon vanilla
- 1 cup peanuts, roughly chopped
- 1–2 sleeves Ritz crackers
Instructions
- Prepare the Cookie Sheet:
- Line a cookie sheet with parchment paper and arrange crackers in a single layer.
- Make the Caramel Mixture:
- In a small saucepan, combine sweetened condensed milk, butter, and brown sugar. Cook over medium heat for 7-8 minutes, stirring often.
- Add Milk, Vanilla, and Peanuts:
- Reduce heat to low and whisk in milk, vanilla, and peanuts until smooth. Cook for 2 more minutes, or until the mixture thickens, then remove from heat.
- Assemble the Cookies:
- Use a cookie scoop to top each cracker with the caramel mixture.
- Cool and Store:
- Allow cookies to cool completely, then store them in an airtight container.
