Description

Soft and golden braided pastry filled with creamy vanilla custard and sweet raisins, finished with a delicate glaze drizzle. Perfect for breakfast, brunch, or an afternoon treat.


Ingredients

  • 3 1/2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1 1/4 cups warm whole milk, divided
  • 1/4 cup unsalted butter, softened
  • 2 large eggs, divided
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1/2 cup raisins
  • 3 tablespoons cornstarch
  • 1 cup powdered sugar
  • 2 tablespoons milk for glaze

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a bowl, combine 1/4 cup warm milk with active dry yeast and let sit for 5 minutes until foamy.
  3. Add flour, 1/4 cup sugar, softened butter, 1 egg, and salt. Knead until a smooth and elastic dough forms.
  4. Place dough in a lightly greased bowl, cover, and let rise for about 1 hour until doubled in size.
  5. In a saucepan, whisk together remaining 1 cup milk, remaining 1/4 cup sugar, cornstarch, 1 egg, and vanilla extract. Cook over medium heat, stirring constantly, until thickened. Remove from heat and allow to cool slightly.
  6. Roll the dough into a rectangle. Spread the custard evenly over the surface and sprinkle with raisins.
  7. Cut into strips and twist each strip gently before placing on the prepared baking sheet.
  8. Bake for 18 to 22 minutes until golden brown.
  9. In a small bowl, mix powdered sugar and 2 tablespoons milk until smooth. Drizzle over slightly warm twists.
  10. Allow to cool slightly before serving.

Notes

  • Allow custard to cool slightly before spreading to prevent it from running.
  • Do not overfill to avoid leakage during baking.
  • Store in an airtight container for up to two days and reheat gently if desired.
