Scale
- 1 cup old-fashioned rolled oats
- 2 cups milk (dairy or non-dairy)
- 2 large eggs
- 1/4 cup sugar (or to taste)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional toppings: fresh fruit, nuts, or maple syrup
Instructions
- In a medium saucepan, combine the oats, milk, and salt. Bring to a simmer over medium heat, stirring occasionally.
- Once the mixture is simmering, reduce the heat to low and cook for 5-7 minutes, stirring often, until the oats are tender and most of the liquid is absorbed.
- In a small bowl, whisk together the eggs, sugar, cinnamon, and vanilla extract.
- Slowly add the egg mixture to the oatmeal, stirring constantly to prevent the eggs from scrambling.
- Continue cooking on low heat for another 2-3 minutes, or until the oatmeal thickens and the custard has fully set.
- Remove from heat and serve warm with your choice of toppings, such as fresh berries, nuts, or a drizzle of maple syrup.
Notes
- For a creamier texture, you can use full-fat milk or add a splash of cream to the oatmeal.
- If you prefer a sweeter oatmeal, you can adjust the sugar amount to taste or add a bit of honey or maple syrup.
- This custard oatmeal can also be made ahead and reheated in the microwave for a quick breakfast option.
