Description
A deeply savory, warmly spiced roasted chicken paired with a sweet-tangy apple miso sauce that caramelizes beautifully with shallots and Honeycrisp apples. Comforting, aromatic, and full of layered flavor.

- 4 chicken thighs, bone-in, skin-on (about 2 pounds)
- 3 tablespoons olive oil
- 4 garlic cloves, finely minced
- 1 1/2 teaspoons curry powder
- 1 1/2 teaspoons salt
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cardamom
- 1/2 cup apple cider
- 5 tablespoons brown sugar
- 3 tablespoons white miso
- 2 tablespoons apple cider vinegar
- 2 tablespoons butter
- 4 shallots, thinly sliced
- 1 large Honeycrisp apple, sliced 1/4-inch thick
- 1 tablespoon chopped cilantro, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, minced garlic, curry powder, salt, cumin, coriander, paprika, black pepper, cinnamon, and cardamom.
- Rub the seasoning mixture all over the chicken thighs, ensuring it gets under the skin.
- Place chicken on a baking sheet or oven-safe skillet and roast for 35–40 minutes, or until skin is crispy and internal temperature reaches 165°F (74°C).
- Meanwhile, prepare the apple miso sauce by adding apple cider, brown sugar, white miso, and apple cider vinegar to a saucepan. Whisk to combine.
- Add butter, sliced shallots, and Honeycrisp apple. Cook over medium heat until apples soften and sauce thickens (8–10 minutes).
- Once chicken is done, spoon the warm apple miso sauce over the roasted thighs.
- Garnish with chopped cilantro before serving.
Notes
- For extra depth, marinate the chicken in the spice mixture for up to 2 hours.
- Substitute Honeycrisp apples with Fuji or Gala if needed.
- Serve with rice, couscous, or roasted vegetables to soak up the sauce.
