Description

A deeply savory, warmly spiced roasted chicken paired with a sweet-tangy apple miso sauce that caramelizes beautifully with shallots and Honeycrisp apples. Comforting, aromatic, and full of layered flavor.


Ingredients

  • 4 chicken thighs, bone-in, skin-on (about 2 pounds)
  • 3 tablespoons olive oil
  • 4 garlic cloves, finely minced
  • 1 1/2 teaspoons curry powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/2 cup apple cider
  • 5 tablespoons brown sugar
  • 3 tablespoons white miso
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons butter
  • 4 shallots, thinly sliced
  • 1 large Honeycrisp apple, sliced 1/4-inch thick
  • 1 tablespoon chopped cilantro, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, curry powder, salt, cumin, coriander, paprika, black pepper, cinnamon, and cardamom.
  3. Rub the seasoning mixture all over the chicken thighs, ensuring it gets under the skin.
  4. Place chicken on a baking sheet or oven-safe skillet and roast for 35–40 minutes, or until skin is crispy and internal temperature reaches 165°F (74°C).
  5. Meanwhile, prepare the apple miso sauce by adding apple cider, brown sugar, white miso, and apple cider vinegar to a saucepan. Whisk to combine.
  6. Add butter, sliced shallots, and Honeycrisp apple. Cook over medium heat until apples soften and sauce thickens (8–10 minutes).
  7. Once chicken is done, spoon the warm apple miso sauce over the roasted thighs.
  8. Garnish with chopped cilantro before serving.

Notes

  • For extra depth, marinate the chicken in the spice mixture for up to 2 hours.
  • Substitute Honeycrisp apples with Fuji or Gala if needed.
  • Serve with rice, couscous, or roasted vegetables to soak up the sauce.
