- 1 lb goat meat, cut into chunks

- 1 tablespoon all-purpose seasoning

- 2 cups beef broth or water
- 1 scotch bonnet pepper (optional, for heat)
- 1 bay leaf
- Salt and pepper to taste
- For the noodles:
- 8 oz noodles (egg noodles or your preferred variety)
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon honey or sugar
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- In a large bowl, season the goat meat with curry powder, all-purpose seasoning, salt, and pepper. Let it marinate for at least 30 minutes.
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the onions, ginger, and garlic, and sautรฉ until fragrant, about 2-3 minutes.
- Add the marinated goat meat to the pot and brown the meat on all sides for 5-7 minutes.
- Add the beef broth (or water), scotch bonnet pepper, and bay leaf. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the goat meat is tender and the flavors are well developed.
- Meanwhile, cook the noodles according to the package instructions. Drain and set aside.
- Once the curry goat is cooked and tender, taste and adjust the seasoning if needed. Remove the scotch bonnet pepper if used.
- In a separate pan, heat sesame oil over medium heat. Add the cooked noodles, soy sauce, and honey or sugar. Toss to coat the noodles evenly in the sauce.
- To serve, place the noodles in bowls and top with the curry goat. Garnish with fresh cilantro and serve hot.
