    • 2 tablespoons vegetable oil
    • 2 cups beef broth or water
    • 1 scotch bonnet pepper (optional, for heat)
    • 1 bay leaf
    • Salt and pepper to taste
  • For the noodles:
    • 8 oz noodles (egg noodles or your preferred variety)
    • 1 tablespoon sesame oil
    • 1 tablespoon soy sauce
    • 1 teaspoon honey or sugar
    • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. In a large bowl, season the goat meat with curry powder, all-purpose seasoning, salt, and pepper. Let it marinate for at least 30 minutes.
  2. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the onions, ginger, and garlic, and sautรฉ until fragrant, about 2-3 minutes.
  3. Add the marinated goat meat to the pot and brown the meat on all sides for 5-7 minutes.
  4. Add the beef broth (or water), scotch bonnet pepper, and bay leaf. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the goat meat is tender and the flavors are well developed.
  5. Meanwhile, cook the noodles according to the package instructions. Drain and set aside.
  6. Once the curry goat is cooked and tender, taste and adjust the seasoning if needed. Remove the scotch bonnet pepper if used.
  7. In a separate pan, heat sesame oil over medium heat. Add the cooked noodles, soy sauce, and honey or sugar. Toss to coat the noodles evenly in the sauce.
  8. To serve, place the noodles in bowls and top with the curry goat. Garnish with fresh cilantro and serve hot.

Notes

  • You can add vegetables like carrots or bell peppers to the curry for extra flavor and color.
  • For a richer flavor, consider adding a teaspoon of coconut milk or cream to the curry sauce.
