Description

These Curried Chicken Sliders are packed with bold spices, tender chicken, and a creamy sauce, all nestled in soft, buttery slider buns. Perfect for an easy dinner recipe, party appetizer, or game-day treat, these high-protein mini sandwiches will have everyone coming back for more!


Ingredients

For the Chicken:

  • 1 lb boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1/4 cup yogurt
  • 2 tbsp oil of choice
  • 1 tbsp lemon juice
  • 3โ€“4 cloves garlic, minced
  • 1 tsp EACH: cumin, coriander powder, salt
  • 1/2 tsp EACH: garam masala, fenugreek, curry powder, chili powder, turmeric, black pepper
  • 1/2 onion, sliced or chopped
  • 1/2 bell pepper, sliced or chopped

For the Sliders:

  • 1 package slider buns (12 rolls)
  • 1โ€“2 cups shredded mozzarella cheese (or cheese of choice)

For the Sauce:

  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp hot sauce, sriracha, or red chili sauce
  • 1 tsp Dijon mustard

For the Herb Butter:

  • 4 tbsp butter, melted
  • 4 cloves garlic, minced
  • 2 tbsp cilantro or parsley, minced

Instructions

  • Marinate the Chicken:

    • In a medium bowl, mix the chicken, yogurt, oil, lemon juice, garlic, and spices.
    • Cover and marinate in the fridge for 30 minutes or up to 48 hours.
  • Cook the Chicken:

    • Heat a heavy-duty pan over medium-high heat.
    • Add the marinated chicken, onions, and bell peppers.
    • Cook for 8-10 minutes until chicken is cooked through.
  • Prepare Sauce & Herb Butter:

    • In a small bowl, whisk together mayonnaise, ketchup, hot sauce, and Dijon mustard.
    • In another bowl, mix melted butter, garlic, and cilantro/parsley.
  • Assemble the Sliders:

    • Preheat oven to 375ยบF.
    • Line a 9ร—13-inch baking dish with foil and coat lightly with oil or butter.
    • Slice the slider rolls in half and place the bottoms into the pan.
    • Spread the sauce on both sides of the buns.
    • Add the cooked chicken mixture and sprinkle generously with cheese.
    • Place the slider roll tops over the filling and press down gently.
    • Brush the tops with herb butter.
  • Bake & Serve:

    • Bake for 15 minutes, or until the cheese is melted.
    • Cover with foil until ready to serve.

Notes

  • For extra spice, add more chili powder or hot sauce.
  • For a crispy top, broil the sliders for 1-2 minutes after baking.
  • To make ahead, assemble the sliders and refrigerate until ready to bake.
  • Serve with fries, a side salad, or coleslaw.
