- 1 1/2 pounds cooked chicken, shredded
- 1 cup frozen peas
- 1/2 cup carrots, diced
- 1/4 cup all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper, to taste
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, melt butter over medium heat. Sauté onion and garlic until softened.
- Add curry powder and cook for 1 minute to release flavors.
- Stir in flour and cook for 2 minutes, stirring constantly.
- Gradually whisk in chicken broth and heavy cream, cooking until sauce thickens.
- Add shredded chicken, peas, and carrots. Season with salt and pepper.
- Pour mixture into a pie dish.
- Roll out puff pastry to fit over the pie dish and place it on top, trimming excess edges.
- Brush pastry with beaten egg for a golden finish.
- Bake for 25-30 minutes or until pastry is puffed and golden brown.
- Let cool for 5 minutes before serving.
