Description

Curried Chicken Lime Coleslaw and Mint Yoghurt is a bold, vibrant dish that blends warm curry spices with zesty lime and cool, refreshing mint. Served over a crunchy cabbage slaw, it’s a perfect high-protein meal for lunch or dinner, packed with flavor and freshness.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 tbsp curry powder
  • 1 tbsp olive oil
  • Juice of 1 lime
  • 4 cups shredded cabbage (green or a mix of red and green)
  • 1 cup shredded carrots
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 1 cup plain Greek yogurt
  • 2 tbsp chopped fresh mint
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss shredded chicken with curry powder, olive oil, and lime juice. Set aside to marinate for 10 minutes.
  2. In a large bowl, combine cabbage, carrots, red onion, and cilantro.
  3. In a small bowl, mix Greek yogurt, mint, garlic, salt, and pepper to create the mint yoghurt dressing.
  4. Add the curried chicken to the slaw mixture and toss gently to combine.
  5. Drizzle with mint yoghurt dressing and toss again or serve it on the side.
  6. Garnish with extra cilantro or mint leaves before serving.
