- 2 cups cooked chicken breast, shredded
- 2 tbsp curry powder
- 1 tbsp olive oil
- Juice of 1 lime
- 4 cups shredded cabbage (green or a mix of red and green)
- 1 cup shredded carrots
- 1/2 red onion, thinly sliced
- 1/4 cup chopped cilantro
- 1 cup plain Greek yogurt
- 2 tbsp chopped fresh mint
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- In a bowl, toss shredded chicken with curry powder, olive oil, and lime juice. Set aside to marinate for 10 minutes.
- In a large bowl, combine cabbage, carrots, red onion, and cilantro.
- In a small bowl, mix Greek yogurt, mint, garlic, salt, and pepper to create the mint yoghurt dressing.
- Add the curried chicken to the slaw mixture and toss gently to combine.
- Drizzle with mint yoghurt dressing and toss again or serve it on the side.
- Garnish with extra cilantro or mint leaves before serving.
