Description

This Crustless Spinach Quiche is bursting with flavor, featuring melty cheese, sweet yellow onions, garlic, vibrant spinach, and fragrant fresh basil. A simple, crustless version of a classic quiche that is perfect for any meal of the day


Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, finely chopped
  • 1 tablespoon garlic, minced
  • 6 ounces fresh spinach, chopped
  • 1/2 teaspoon basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 large eggs
  • 2/3 cup milk
  • 6 ounces Colby / Monterey Jack cheese, shredded

Instructions

  • Preheat the oven to 350℉ and grease a 9-inch pie plate.
  • In a large skillet, warm olive oil and add onion. Cook until translucent and slightly browned, about 7-8 minutes.
  • Add garlic to the pan and cook for 1 minute until fragrant.
  • Stir in spinach in batches, cooking until wilted. Remove from heat and set aside.
  • In a medium bowl, whisk together eggs, milk, salt, and pepper. Stir in the cheese and cooked vegetables.
  • Pour the mixture into the greased pie plate and bake for 45 minutes. The edges should brown, and the center should set.
  • Cool for 10 minutes, then slice and serve.

Notes

  • Feel free to use other cheeses, such as cheddar, if preferred.
  • This quiche can be served warm or at room temperature.
  • Ideal for brunch or a light dinner.
