- 1 tablespoon olive oil
- 1/2 medium yellow onion, finely chopped
- 1 tablespoon garlic, minced
- 6 ounces fresh spinach, chopped
- 1/2 teaspoon basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 large eggs
- 2/3 cup milk
- 6 ounces Colby / Monterey Jack cheese, shredded
Instructions
- Preheat the oven to 350℉ and grease a 9-inch pie plate.
- In a large skillet, warm olive oil and add onion. Cook until translucent and slightly browned, about 7-8 minutes.
- Add garlic to the pan and cook for 1 minute until fragrant.
- Stir in spinach in batches, cooking until wilted. Remove from heat and set aside.
- In a medium bowl, whisk together eggs, milk, salt, and pepper. Stir in the cheese and cooked vegetables.
- Pour the mixture into the greased pie plate and bake for 45 minutes. The edges should brown, and the center should set.
- Cool for 10 minutes, then slice and serve.
Notes
- Feel free to use other cheeses, such as cheddar, if preferred.
- This quiche can be served warm or at room temperature.
- Ideal for brunch or a light dinner.
