Description

  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup milk (any kind)
  • 1/4 cup onion (chopped)
  • 1/4 cup bell pepper (chopped)
  • 1/2 cup spinach (chopped)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a pie dish or quiche pan with a bit of cooking spray or olive oil.
  2. Prepare the veggie filling: In a skillet, sauté the onion, bell pepper, and spinach over medium heat until the vegetables are tender (about 5 minutes). Set aside to cool slightly.
  3. Make the quiche mixture: In a large bowl, whisk together the eggs, cottage cheese, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
  4. Combine veggies and egg mixture: Stir the sautéed veggies into the egg mixture, then pour the entire mixture into the prepared baking dish.
  5. Bake the quiche: Bake for 30-35 minutes, or until the quiche is set and lightly golden on top.
  6. Serve: Let the quiche cool for a few minutes before slicing. Garnish with fresh herbs if desired and serve warm.
