- 1/4 cup corn kernels (fresh, frozen, or canned) (optional)

Instructions
- Prepare the Chicken Filling:
- In a large bowl, combine the shredded chicken, cheese, black beans (if using), corn (if using), salsa or pico de gallo (if using), and taco seasoning. Mix well until everything is evenly combined.
- Assemble the Quesadillas:
- Lay out one tortilla on a clean surface. Spread about ยฝ cup of the chicken filling evenly over one half of the tortilla, leaving a small border around the edge.
- Fold the other half of the tortilla over the filling, forming a half-moon shape.
- Repeat with the remaining tortillas and filling.
- Prepare the Baking Sheet:
- Brush a large baking sheet with melted butter or olive oil.
- Arrange Quesadillas on the Baking Sheet:
- Place the assembled quesadillas in a single layer on the prepared baking sheet. You might need two baking sheets depending on the size of your oven and tortillas.
- Brush the tops of the quesadillas with more melted butter or olive oil.
- Bake the Quesadillas:
- Bake in a preheated oven at 400ยฐF (200ยฐC) for 10-12 minutes per side, or until the tortillas are golden brown and crispy, and the cheese is melted. Flip the quesadillas halfway through using a large spatula.
- Cut and Serve:
- Let the quesadillas cool slightly before cutting them into wedges.
- Serve immediately with your favorite toppings, such as sour cream, chopped cilantro, salsa, or hot sauce.
Notes
- Customize Your Fillings: Feel free to add cooked vegetables like bell peppers, onions, or mushrooms. You can also use different cheeses like Monterey Jack or pepper jack for a spicier kick.
- Spice It Up: Add a pinch of cayenne pepper or a few drops of hot sauce to the chicken filling for extra heat.
- Make it Cheesy: Add more cheese to the filling if you prefer extra cheesy quesadillas.
- Use Different Tortillas: Whole wheat tortillas or flavored tortillas can add a different twist to the recipe.
- Grilling Option: Instead of baking, you can grill these quesadillas over medium heat for 3-5 minutes per side, or until golden brown and the cheese is melted.
