Description

A creamy and comforting slow cooker dinner made with tender chicken, fresh broccoli, rich cream cheese, and melted cheddar. This easy crockpot meal delivers cheesy flavor in every bite and is perfect for busy weeknights.


Ingredients

  • 2 pounds boneless skinless chicken thighs, cut into bite sized pieces
  • 4 cups fresh broccoli florets
  • 2 cups shredded cheddar cheese
  • 8 ounces cream cheese, cubed
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Lightly grease a 6 quart slow cooker.
  2. Place the chicken pieces in the bottom of the crockpot.
  3. Sprinkle salt, black pepper, onion powder, and minced garlic evenly over the chicken.
  4. Add cubed cream cheese evenly on top of the chicken.
  5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is fully cooked and tender.
  6. Add broccoli florets during the last 45 to 60 minutes of cooking and stir gently.
  7. Sprinkle shredded cheddar cheese over the top, cover, and allow it to melt completely.
  8. Stir everything together until creamy and well combined before serving.

Notes

  • Add broccoli near the end to prevent overcooking.
  • Cube the cream cheese for smoother melting.
  • Let the dish rest for a few minutes after cooking to naturally thicken.
  • Shred your own cheese for the best melting texture.
