Description

These Zucchini Tots are a crispy, cheesy, and healthy alternative to traditional tater tots! Made with fresh zucchini, cheddar cheese, and flavorful seasonings, they’re baked to golden perfection. Ingredients

  • 2 cups zucchini, shredded and squeezed to remove excess liquid (about 2 small zucchini)
  • 1 large egg
  • 1/2 cup panko breadcrumbs (or gluten-free breadcrumbs for GF option)
  • 1/2 cup flour (or gluten-free flour for GF option)
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  • Preheat oven to 425°F (220°C). Grease a baking pan.
  • In a large bowl, mix all ingredients until well combined.
  • Shape the mixture into tots, balls, or discs (about 2 tablespoons each) and place them on the baking pan.
  • Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  • Serve with your favorite dipping sauce and enjoy!

Notes

  • If the batter isn’t holding together, add a little extra flour.
  • Try different cheeses like mozzarella or parmesan for a flavor twist!
  • Swap the Italian seasoning for ranch, taco, or Cajun seasoning for a new taste.
  • Serve with a gochujang ketchup dip (1 tablespoon gochujang mixed into 1/2 cup ketchup).
