- 3/4 cup Panko breadcrumbs
- 2 ounces Parmesan cheese, finely grated
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 large eggs, lightly beaten with 1 tablespoon water
- 2 medium zucchini, cut into wedges and patted dry
- 3 tablespoons all-purpose flour
- 1 teaspoon minced fresh parsley (for garnish)
Instructions
- Preheat oven to 450°F. Drizzle olive oil onto a large baking tray and spread evenly.
- Prepare the coating: In a shallow bowl, mix Panko breadcrumbs, Parmesan, Italian seasoning, garlic powder, onion powder, salt, and pepper.
- In another shallow bowl, beat the eggs and water together.
- Add zucchini wedges and flour to a Ziploc bag, close, and shake to coat evenly.
- Shake off excess flour, dip each zucchini wedge in egg wash, then coat in the breadcrumb mixture. Place on the prepared baking tray.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Garnish with fresh parsley and serve warm with marinara or ranch for dipping. Enjoy!
Notes
- For extra crispiness, broil for the last 2-3 minutes.
- Swap Panko for gluten-free breadcrumbs for a gluten-free version.
