Description

These crispy Baked Zucchini Fries are a delicious way to enjoy more veggies! Coated in Parmesan, Panko breadcrumbs, and Italian seasoning, these oven-baked zucchini fries are the perfect healthy alternative to traditional fries. Serve them with marinara or ranch for a tasty side or snack!


Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3/4 cup Panko breadcrumbs
  • 2 ounces Parmesan cheese, finely grated
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 large eggs, lightly beaten with 1 tablespoon water
  • 2 medium zucchini, cut into wedges and patted dry
  • 3 tablespoons all-purpose flour
  • 1 teaspoon minced fresh parsley (for garnish)

Instructions

  • Preheat oven to 450°F. Drizzle olive oil onto a large baking tray and spread evenly.
  • Prepare the coating: In a shallow bowl, mix Panko breadcrumbs, Parmesan, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  • In another shallow bowl, beat the eggs and water together.
  • Add zucchini wedges and flour to a Ziploc bag, close, and shake to coat evenly.
  • Shake off excess flour, dip each zucchini wedge in egg wash, then coat in the breadcrumb mixture. Place on the prepared baking tray.
  • Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  • Garnish with fresh parsley and serve warm with marinara or ranch for dipping. Enjoy!

Notes

  • For extra crispiness, broil for the last 2-3 minutes.
  • Swap Panko for gluten-free breadcrumbs for a gluten-free version.
  • Try dipping in garlic aioli or spicy mayo for variety!
