Description

These Crispy Tofu and Veggie Patties are a wholesome, flavorful snack or light meal option, packed with protein-rich tofu and a medley of vibrant vegetables. Spiced with warm Indian flavors and shallow-fried until golden, theyโ€™re perfect for serving with chutney or stuffing into wraps and burgers.

Ingredients

Units Scale
  • 14 oz Firm Tofu
  • 1 Medium Sweet Potato
  • 1 Large Potato
  • 1 Large Carrot
  • 15 French Beans
  • 1 cup Broccoli Florets
  • 1 Teaspoon Salt (add more if needed)
  • 1.5 Teaspoons Kashmiri Red Chili Powder
  • 1.5 Teaspoons Coriander Cumin Powder
  • 1/2 Teaspoon Turmeric
  • 1.5 Teaspoons Garam Masala
  • 1.5 Teaspoons Dry Mango Powder
  • 2 Tablespoons Ginger Garlic Green Chilies, Minced
  • 1/2 cup Breadcrumbs (add more if needed)
  • 1/4 cup Avocado Oil (for shallow frying the patties)

Instructions

  1. Peel and boil the sweet potato, regular potato, and carrot until soft. Steam the French beans and broccoli until tender. Let all vegetables cool slightly.
  2. Mash the boiled vegetables in a large mixing bowl. Crumble the tofu into the bowl and mix well.
  3. Add the minced ginger, garlic, and green chilies, followed by all the spices: salt, chili powder, coriander-cumin powder, turmeric, garam masala, and dry mango powder. Mix until everything is evenly combined.
  4. Add breadcrumbs gradually to bind the mixture. If itโ€™s too wet, add more breadcrumbs until the consistency is firm enough to form patties.
  5. Divide the mixture into equal portions and shape into patties.
  6. Heat avocado oil in a skillet over medium heat. Shallow fry the patties in batches until both sides are golden brown and crispy.
  7. Drain excess oil on paper towels. Serve hot with your favorite chutney or sauce.

Notes

  • Press tofu ahead of time to remove excess moisture for better texture.
  • You can customize the veggies based on what you have on hand.
  • To make it gluten-free, use gluten-free breadcrumbs or crushed oats.
  • Great for freezingโ€”just shape and freeze the uncooked patties for later use.
