- 2 corn or flour tortillas
- 1 tablespoon olive oil or butter
- 1/2 cup grated Russet potato
- 1/4 cup grated Cheddar, Asiago, or cheese of choice
- 2 eggs
- Kosher salt and pepper to taste
- Hot sauce
- Lime
Instructions
- Warm the tortillas by your preferred method: in a nonstick skillet over medium heat, directly over the flame, or in a toaster or toaster oven. Transfer to a plate.
- Heat the olive oil or butter in a nonstick skillet over medium heat. Sprinkle the grated potato into two piles in the pan. Spread the piles to about the size of the tortilla. The potato should not be clumped together. Salt the potato.
- Sprinkle the cheese evenly over the potato. Itโs okay if some cheese touches the pan, as it will form crispy edges like grilled cheese.
- Make an indent in the center of each pile and crack an egg into each. Salt and pepper the eggs. Cover the skillet and cook until the potatoes are golden and the egg whites are cooked through, about 3-4 minutes.
- Use a spatula to carefully lift the potato and cheese from the skillet and slide it onto the warm tortillas.
- Serve with hot sauce and lime wedges, or any other toppings you prefer. The egg yolk acts as a built-in sauce.
Notes
- Use only ยผ cup of lightly packed grated potato per taco to avoid excess moisture. A small 3 oz potato will provide more than enough.
- If you prefer a stronger flavor, consider using different types of cheese, such as sharp cheddar or Asiago.
- The green sauce shown in the photos is a garlic scape pesto, but you can substitute it with any sauce of your choice.
- For an extra crispy result, ensure the potato strands are not clumped together in the skillet.
