Description

These crispy beef quesadillas are baked in the oven, so you can make multiple at onceโ€”no flipping one by one on the stovetop! Stuffed with flavorful taco-seasoned beef, black beans, and corn, then baked to golden perfection. Perfect for an easy dinner or a fun party appetizer.

Beef Filling:

  • 2 tsp olive oil
  • 250g (8 oz) ground beef (or chicken, turkey, pork, lamb)
  • 1 tbsp tomato paste
  • 1/3 cup corn kernels (canned, drained, or frozen)
  • 1/3 cup black beans (canned, drained)
  • 2 tbsp water

Homemade Taco Seasoning:

  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/8 tsp cayenne pepper (optional)
  • 1/4 tsp kosher salt

Quesadillas:

  • 4 flour tortillas (20cm / 8โ€)
  • 3 tsp olive oil
  • 1 1/4 cups shredded cheese (cheddar, Monterey Jack, Colbyโ€”avoid mozzarella)

Serving Options:

  • Guacamole or avocado sauce
  • Pico de Gallo
  • Sour cream

Instructions

. Make the Beef Filling:

  • Heat 2 tsp olive oil in a non-stick pan over high heat.
  • Add ground beef, cook, and break it up until mostly browned.
  • Stir in the taco seasoning, cooking for 1 minute.
  • Add tomato paste, cook for 30 seconds.
  • Mix in black beans, corn, and water, stir to combine.
  • Cook until the mixture is juicy but not watery (helps with crispiness).
  • Transfer to a bowl and let cool for at least 15 minutes.

2. Preheat & Prepare:

  • Preheat oven to 220ยฐC (425ยฐF) (200ยฐC fan-forced).
  • Grease a metal baking tray with 1 tsp olive oil.

3. Assemble the Quesadillas:

  • Spread beef filling on one half of each tortilla.
  • Sprinkle with shredded cheese, then fold in half.
  • Place quesadillas on the prepared tray.
  • Drizzle ยฝ tsp olive oil over the top, spreading evenly with your hands.
  • Press quesadillas gently to flatten.

4. Bake to Crispy Perfection:

  • Bake for 8 minutes.
  • Flip each quesadilla, bake for 5 minutes, flip again, and bake for 2 more minutes until golden and crispy.
  • (Optional: Spritz with a little oil for extra crispiness!)
