Description

A fresh and vibrant Greek pasta salad packed with crisp vegetables, feta cheese, and a light lemon olive oil dressing.


Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, sliced
  • 1/2 cup kalamata olives, sliced
  • 1 cup feta cheese, cubed
  • 1/3 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta until just tender, then drain and rinse with cold water.
  3. Whisk together olive oil, lemon juice, oregano, garlic, salt, and black pepper.
  4. Combine pasta, tomatoes, cucumber, onion, olives, and feta in a bowl.
