- 1/2 cup olive oil
- 1 full rotisserie chicken, skin removed, meat picked off and shredded
- 1 tablespoon grated fresh ginger
- 1 tablespoon grated lemongrass
- 1 tablespoon minced garlic
- 2 cups shredded red cabbage
- 2 cups shredded green cabbage or napa cabbage
- 1/2 cup minced fresh parsley
- 1/2 cup minced fresh cilantro
- 1/2 cup diced red onion
- 1/4 cup minced fresh mint
- 1/4 cup fresh lime juice
- Zest of 1 lime
- 1 large green apple, cut into matchsticks
- Kosher salt, to taste
Instructions
- Place the shredded chicken, red cabbage, green cabbage, green apple, red onion, parsley, cilantro, and mint into a large mixing bowl.
- In a separate bowl, whisk together the olive oil, lime juice, lime zest, grated ginger, grated lemongrass, minced garlic, and kosher salt.
- Pour the dressing over the salad mixture.
- Toss gently until all ingredients are evenly coated.
- Taste and adjust seasoning with additional salt if needed.
- Let the salad rest for 10 to 15 minutes before serving for best flavor.
- Serve chilled or at room temperature.
