Description

A fresh and vibrant cabbage salad tossed with tender shredded chicken, crisp apples, fragrant herbs, and a bright lime dressing for a light yet satisfying meal.


Ingredients

  • 1/2 cup olive oil
  • 1 full rotisserie chicken, skin removed, meat picked off and shredded
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon grated lemongrass
  • 1 tablespoon minced garlic
  • 2 cups shredded red cabbage
  • 2 cups shredded green cabbage or napa cabbage
  • 1/2 cup minced fresh parsley
  • 1/2 cup minced fresh cilantro
  • 1/2 cup diced red onion
  • 1/4 cup minced fresh mint
  • 1/4 cup fresh lime juice
  • Zest of 1 lime
  • 1 large green apple, cut into matchsticks
  • Kosher salt, to taste

Instructions

  1. Place the shredded chicken, red cabbage, green cabbage, green apple, red onion, parsley, cilantro, and mint into a large mixing bowl.
  2. In a separate bowl, whisk together the olive oil, lime juice, lime zest, grated ginger, grated lemongrass, minced garlic, and kosher salt.
  3. Pour the dressing over the salad mixture.
  4. Toss gently until all ingredients are evenly coated.
  5. Taste and adjust seasoning with additional salt if needed.
  6. Let the salad rest for 10 to 15 minutes before serving for best flavor.
  7. Serve chilled or at room temperature.

Notes

  • Slice cabbage thinly for the best texture.
